Gluten Free + Paleo Chicken Nuggets
It can be challenging recreating basic loved foods, like breaded chicken tenders. However, one of my favorite things to do as an amateur chef is come up with new ways to make old favorites healthy and fit my families lifestyle. This is my latest attempt. Let me know how you like it.
Ingredients
1 pound boneless, skinless chicken strips
1 egg or 2 egg yolks or 2 egg whites
3/4 cup Cassava Flour, gluten free flour or almond flour
1/4 cup finely shredded coconut
1 tsp garlic salt
1/2 tsp pepper
1 tsp paprika
1/4 tsp cayenne pepper or white pepper
1/4 tsp sea salt
1/2 tsp all purpose seasoning
1/4 tsp pepper
Directions
1. Preheat oven to 400 degrees line a glass baking dish with parchment paper.
2. Have two bowls set aside for breading mixture.
3. In the first bowl whisk eggs and side aside.
4. In the second bowl add dry ingredients and stir until mixed well.
5. Take chicken strip dredge in egg mixture first then in dry ingredients, place on parchment paper.
6. Repeat until completed.
7. Drizzle with olive oil and bake for 8-10 mins then turn for the opposite side. Note: be careful not to overcook chicken making it dry and tough.
If not crispy set heat to broil for 1-2 mins just to brown.
