A Perfect candy marriage is A Chocolate and Peanut Butter anything.  It is a perfect combination in cookies, cakes, candies.   I love baking and cooking trying to create and recreate foods into tastier, healthier foods my family and friends will enjoy.  One of the things I have been making for years is peanut butter candy. Much like a  traditional Reese’s peanut butter cup which happens to be delicious; However, they have added oils, sugars, and preservatives.  Here is a new gluten free, protein packed healthier version.  Perfect for Easter baskets or treats to take to your kids’ school for parties.  So easy to make and lots of ways to change it up.

 

Gluten Free Chocolate Nutty Butter Cups  

 

Ingredients

1 cup no added oil or sugar  creamy peanut butter or my families favorite creamy almond butter Barney Butter Bare Almond Butter, Smooth

3/4 cup dark chocolate one good option is  Lindt Chocolate Dessert Specialty Baking Chocolate Bar, 7 Ounce you can also use chocolate chips 

1/4 tsp vanilla

 

 

Instructions

1. Line a 12 cup muffin pan with cupcake liners.  You can also use parchment paper.

2. Melt the chocolate in a double broiler on low heat using caution not to burn. Slowly add the butter mixture to chocolate mixture as it melts stirring until it’s creamy.

3. Sprinkle with sea salt for an added savory taste.

4. Place the muffin pan in the freezer for 1-2 hours.

 

Variations:

Add crushed nuts or dried fruit in with the chocolate mixture.

You can also add some 1/4 tsp peppermint oil. .mydoterra.com 

Grate 2 tsp of orange rind for a sweetness.

Add 1 Tbsp chopped gluten free pretzels for added sweet and salty taste.
