Chocolate Cake it’s an American staple like hot dogs, baseball, and pizza.  Dark Chocolate is a rich food in antioxidants; the rich nutrients in it may improve blood flow and help in lowering cholesterol.  The higher the chocolate content the lower the sugar the higher the benefits.  Sometimes you just have to allow yourself the benefits right……. Try this gluten free, dairy free recipe for your sweet tooth.

Gluten Free Dreamy Chocolate

 

Ingredients:

Frosting:

 

Note: to make powdered sugar alternative for this recipe use 3 cups coconut sugar and 3 Tbsp arrowroot.  Place in a high-speed blend like a Vitamix, blend on high until the consistency is like a powder.

 

Directions:

 

Preheat oven to 350 degrees.  Grease two 9 in cake pans, line with parchment paper then dust with flour and coast edges and bottom of the pan then remove excess flour.

In a large bowl add all dry ingredients mix with a fork.  In a medium bowl add all wet ingredients.  In a mixer add wet ingredients blend on low slowly adding the dry ingredients, being careful not to over mix.  You can use a hand held mixer. Divide the cake batter between the pans and level.  Bake for 25-35 minutes checking at the 25 mark with a toothpick.  If not quite ready check every 5 mins until done. Remove from oven, let cool on wire rack.

 

While the cake cools make the frosting.  Place the softened butter in mixer cream on low until soft and creamy.  Slowly add vanilla, powdered sugar, cocoa powder and milk.  Blend on med-low until creamy with soft peaks.

When cake is cooled frost.  Place in refrigerator to set.
