Baking is really one of my favorite things to do with my daughter. I share this love with so many friends who post pictures daily baking with together with their kids. Classroom parties, celebrations, teacher gifts sugar cookies are always a great go-to gift to bake and wrap up. This recipe is easy to use and no one will know they are gluten-free. This dough works great for pies or cheesecake.
Ingredients:
- 1 cup + 2 Tbsp gluten free flour or cassava flour
- 1/3 cup honey
- 1 egg can also use flax eggs ( 1Tbsp flax to 3 Tbsp water)
- 2 tsp coconut oil/ grass fed butter or ghee
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/4 tsp salt
Frosting:
- 1/2 cup coconut milk or milk
- 1 Tbsp gluten free flour
- 1/2 cup grass-fed butter or ghee, or butter at room temperature
- 1/2 cup coconut sugar or 1/4 cup honey
- 1 tsp vanilla
Directions:
Preheat oven to 350 degrees. In a food processor pulse wet ingredients until combined. In a small bowl mix dry ingredients then slowly add to the wet mixture. Pulse on low until combined and the dough is not tacky but is smooth. Remove dough, roll into a ball cover in wrap place in refrigerator for 1 hour.
Roll dough with a rolling pin into a flat 1/4-1/2 inch depending upon your preference. Use cookie cutters, place on a cookie sheet bake for 8-10 minutes. Don’t over bake. Let cool on wire rack.
Frosting:
Cream butter in mixer, slowly add milk, vanilla, and flour. Whip until creamy and soft peaks.
