Eliminating dairy from your diet can be challenging.  For my family, this was a huge challenge and one I didn’t come by lightly.  With an autoimmune condition, I knew it was necessary but I was less than thrilled about giving this up. The research I had done on dairy lead us as a family to make a decision for all of us to be dairy free. My daughter loves cheese. So as a mom I was on a mission to find an alternative.  When I found this Kite Hill Cheese I literally did the happy dance.  I have used it in countless recipes here is one of my favorites. Dairy Free Herb Dip

 

 

  • Start with this container of Kite Hill Ricotta
  • 4 cloves garlic 
  • 2 Tbsp parsley 
  • 1 Tbsp dill 
  • 2 green scallions 
  • 1/4 Tsp salt
  • 1/4 Tsp pepper
  • drizzle with olive oil

Place all ingredients in a food processor and pulse until creamy.

Serve with your favorite veggies

 

Variation: for pasta dish or pizza add basil in place of parsley and dill
