Vegetable Stir-Fry + Homemade Gluten- Free Teriyaki sauce
Serves 4
Ingredients
- 1 Tbsp coconut oil
- 2 tsp fresh ginger, minced
- 1 cup broccoli, chopped
- 2 tsp garlic, minced
- 2 cups green cabbage, shredded
- 3 carrots, grated
- 1/2 onion, chopped
- 1 pound ground chicken, or pork
- 1 cup asparagus, chopped
- 1/2 cup mushrooms, chopped
- 1 tsp salt
- 1 tsp pepper
Directions:
In a large pan heat oil over medium heat. Add onion allow to cook until translucent. Add Broccoli, carrots, and cabbage, cook 10-15 mins with lid on until fork tender.
While vegetables are cooking, in another pan, add ground meat of choice cooking on medium heat, stirring occasionally making sure not to overcook. While stirring break meat up into small, bite-sized pieces.
In vegetable pan when the carrots, broccoli, and cabbage are fork tender add mushrooms stirring until cooked then add season with salt and pepper.
Variation: Can serve over rice or quinoa or spiral noodles
