My mother-in-law would make the most wonderful sweet potato casserole.  I would look forward to it every holiday season and hope there were leftovers for the next week.  The moment they touched your lips you tasted sweet, sugary, dreamy almost dessert-like potatoes.

Now, unfortunately, I am not able to eat that dreamy side dish.  But if you’ve been looking for a dairy-free, healthier version try this recipe.  It has become my new go to.

 

Sweet Potato Mashed

 

Servings 8

Ingredients

 

  • 6 Large Sweet Potatoes peeled and cubed
  • 1/2-1 cup coconut or almond milk( For a creamy consistency)
  • 1/2 tsp salt
  • 1/2 tsp pepper

 

Fill a large stockpot with enough water to cover cubed sweet potatoes. Bring to a boil cooking until sweet potatoes are fork tender but not overdone.  Drain water place sweet potatoes in a bowl season with salt and pepper.  Using a potato masher or fork mash sweet potatoes adding milk until desired consistency.
