Chicken Lettuce Wraps
Lunch ideas can get mundane. I typically eat a salad almost every day. True you can spice up a salad, change it 100 different ways but sometimes you want something different. This recipe is the perfect change up to a sandwich or salad. Kids will love it too. We are gluten free in our home almost always. However, I do integrate some sprouted wheat from time to time. You can choose gluten-free tortillas or try sprouted ones.
Recipe Serves 2
Organic tortillas
- Siete Paleo Tortillas Sampler Pack, Almond Flour & Cassava Coconut,
- New Grains Gluten Free Flour Tortillas 2 packs (4 – 10″ tortillas each)
- Food For Life Tortilla Ezekiel Sprouted Grain, 12 Ounce (Pack of 12)
- organic chicken breast(cooked any way you like)shredded
- 1 organic avocado sliced
- 2 organic carrots shredded
- 1 bunch organic baby spinach
- 1/2 organic cucumber thinly sliced
- 1/4 cup organic thinly sliced red onion
- 2 Tbsp organic shredded cheese of choice(it’s delicious with parmesan)
- salt/pepper to taste
Lay tortilla flat layering the following ingredients in this order; sliced avocado, (I like to smash the avocado as a spread) salt and pepper to taste. Next, sprinkle cheese, shredded carrots, spinach, cucumber, red onion and lastly shredded chicken. Add a little more salt and pepper. Wrap it up and Enjoy!
Variations: make a homemade guacamole or an aioli spread. Add some slivered almonds for a crunch and added protein. Any type of meat, salmon, steak.
Add a side salad or some fruit.
