If you haven’t tried a brined turkey before your in for a real treat.  The thought of bringing a turkey used to make me nervous.  It can be overwhelming enough trying to roast a perfectly moist turkey for your family gathering but add an extra special step and it could be a recipe for disaster. But, one year I decided I was going to take the leap of faith and try it.  I can’t begin to tell you( though taste buds) how deliciously, flavorful and moist that turkey was that year.  My family raved about it and I never looked back.  This easy apple brine recipe is adapted over many years of changing it up and refining.  I think you will agree it will be a show stopper.

Easy Apple Brine

Ingredients

Large Brining Bag

2 Quarts unsweetened apple juice

1 gallon filtered water

1 cup kosher salt

1 apple sliced

10 cloves garlic chopped

3 lemons sliced

4 bay leaves

2 sprigs rosemary

2 sprigs thyme

2 sprigs sage

1 Tbsp allspice

1 Tbsp whole black peppercorns

 

Directions

In a large stockpot, add 2 quarts unsweetened apple juice and 1 gallon of water.  Bring to a simmer. Slowly start adding salt, spices, and garlic stirring as you go.  Lastly, add lemons and apple to your pot.  Bring to a boil.  Remove from heat and let cool.

 

Once cool in a large stockpot or bowl (big enough to hold turkey)insert turkey brining bag, pulling edges of the bag over the stockpot or bowl.  Place turkey in bag breast side up. Add brining mixture slowly until turkey is completely submerged.   Seal bag with the band and refrigerate overnight or up to 36 hours.

When ready to roast turkey, remove from brine and discard.  Rinse turkey, pat dry and let rest for 15 minutes until ready to roast.  Follow roasting recipe instructions here Herb and Apple Brine Turkey
