Turkey Meatball Soup
Ingredients
- 10z White Beans soaked overnight
- 1 Pd ground turkey meat
- 2 Tbsp olive or coconut oil
- 1 onion chopped
- 2 carrots chopped
- 3 celery sticks chopped
- 5 garlic minced
- 1 tsp oregano
- 6 cups chicken stock
- 1 cup water
- 1 jar 15 oz tomato puree
- 2 large zucchini chopped
- 1 tsp salt
- 1/2 tsp pepper
In a large dutch oven warm oil, add chopped onion saute until translucent. Add garlic, carrots, zucchini, and celery stirring 5-10 minutes. Slowly add tomato puree, water, and seasoning. Cover and simmer while preparing meatballs.
Turkey Meatballs
- 1 Pd ground turkey
- 1/2 onion chopped
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
In a large bowl add ground turkey, onion, and seasoning. Roll into 1 inch balls. In a large pan saute turkey meatballs until cooked thoroughly. Add to simmering soup and enjoy!
The trick with flavorful soups is the longer they simmer the better. This is a great soup to start in the afternoon and just let cook until dinner time.
