Perfect Roasted Brussel Sprouts and Sweet Potatoes

 

Roasted  Vegetables are one of my favorite sides no matter what time of year.   The roasting draws the flavors out and transforms ordinary, boring vegetables into family favorites.  This perfect roasted Brussel sprouts and sweet potato recipe has quickly become a family tradition and favorite.

 

Ingredients serve 6-8

1-2 pounds Brussel sprouts trimmed and cut in half

4 sweet potatoes peeled and cubed

1 large onion roughly chopped

1/4 cup olive

1 1/2 tsp sea salt

1/2 tsp ground pepper

1 tsp thyme

1 tsp oregano

1 tsp garlic salt or garlic powder

 

Directions

Preheat oven to 400 degrees.

In a large bowl add, Brussel sprouts, sweet potatoes and onion.  Drizzle olive oil and seasonings, mix to coat.    On a large cookie sheet( may need two depending on size) arrange mixture.  You want vegetables to have ample room around them while roasting, to avoid too much steam.

Bake 20-30 minutes stirring half way through.
