Protein Nut Energy Cookies
Ingredients
- 2 cups gluten free rolled oats
- 1 cup mixed nuts/dried fruit of choice
- 3/4 cup coconut flakes(unsweetened)
- 2/3 cup raw honey
- 1/2 coconut oil
- 1 cup peanut butter or almond butter
- 3 tsp vanilla
- 6 Tablespoons dark cocoa powder
- Sea Salt
- Coconut sugar
Directions
- Line 2 cookie sheets with parchment paper.
- In a large saucepan over medium heat melt honey, coconut oil and nut butter of choice. Re Stirring until the mixture is melted using caution not to burn.
- Remove from heat and stir in the cocoa powder stirring to incorporate, let cool.
- In a large bowl add oats, coconut flakes and vanilla mixing gently. When the liquid mixture is slightly cooled add to the oat mixture, stirring until oats are covered, and the mixture is thick.
- Roll into balls and place on parchment paper cookie sheet. Sprinkle with sea salt.
- Place in freezer until firm. Once firm keep refrigerated.
