Sunday Brunch is a fun time to gather friends and family around your table.  A time to celebrate a holiday, or just to celebrate LIFE and thankful for friends and family.  With Easter fast approaching I started my meal planning weeks ago.  We have some traditions in our family for every holiday, but I also like to try new foods to add to our array of choices.  If you love grapefruit, you will enjoy this simple, tasty new way to serve a healthy fruit-Broiled Grapefruit.

 

Broiled Grapefruit serves 4

 

Ingredients

  • 2 large grapefruit
  • 1/4 cup coconut sugar or raw honey
  • 1 tsp cinnamon
  • sprinkle to taste Himalayan sea salt

 

 

Directions:

 

Preheat oven to broil. Cut grapefruit in half then cut between in a circle meat of grapefruit and the peel.  Then loosen the meat segments in between leaving intact. Place on a glass baking dish.  Drizzle honey over grapefruit or sprinkle coconut sugar, just enough to add some sweetness but not overpowering the tartness of the grapefruit.  Sprinkle each half with cinnamon and top with Himalayan sea salt.

Put under broiler and cook 2-4 minutes until lightly brown and bubbly.
