Remember growing up as a kid and having a warm bowl of cream of wheat or oatmeal for breakfast?  Even as an adult when I had the flu or was a bit under the weather I would make oatmeal and top with some fresh fruit.  Going grain free or following a low carb diet can make the mornings a bit more challenging.  No more grab and go oat bars, or granola, or maybe even a bowl of that oatmeal.

You might ask yourself…..What do I eat?????

 

Even now as I write this there is new research regarding roundup being found in items made from oatmeal .  There is much more research to be done but a landmark decision was made and an award of $289 in damages to a man who is dying of cancer theses claims made was caused by roundup and his exposure as a groundskeeper.

 

Cutting out oats(which tend to be in most breakfast items or snack items) is let’s say another blow to the long list of do not eat.

 

But there are alternatives.  Just 3 Tbsp of Hemp seeds has zero carbs, 3 grams fiber, 10 grams of protein and 13 grams of fat(good fat). This power packed breakfast cereal is honestly one of my personal favorites and so satisfying.  When you eat oatmeal it tastes good going down but an hour later you are hungry again!

 

HEMP SEED CEREAL

 

 

INGREDIENTS

Serves 1

1 cup Organic Coconut Milk(full fat)

1/2 cup Navitas Organics Hemp Seeds

1 tablespoon ground flax seeds

1 tablespoonNutiva Organic

5-6 drops Natural Liquid Stevia – Alcohol Free 

3 walnuts

***Variations

Add some fresh berries(blueberries are lowest in the glycemic index and carb count)

Add Any nuts almonds, or macadamia offers the lowest carb and good fat.

Want some added protein? Add a side of sausage or ground turkey.

 

DIRECTIONS

Combine the coconut milk, hemp seeds, ground flax, chia and to a small pot over medium heat. Stir until boiling. Once it’s boiling, bring down the heat to a low-medium and simmer for about 4 minutes. When the porridge has thickened, remove it from the heat and serve in a bowl. Add the stevia. Top with 3 walnuts.
