Watermelon, Avocado, and tomatoes in a salad, I love summer! We live in the center of California with some of the best summer fruit your palate will taste. There are farmers markets in abundance around town, and where there isn’t a farmers market, you will find a fruit stand, it is simply the best!
Some of our families favorite summer fruit include watermelon, grapes, and peaches, all of which I can’t keep enough on hand. I, on the contrary, love avocados. My next recipe inspired by their love of watermelon and my love of avocados.
Watermelon, Avocado, and Tomato Salad Serve 2
- 2 cups organic watermelon chopped into bite-sized pieces
- 1 large organic avocado cut into bite-sized pieces
- 2 cups organic heirloom tomatoes chopped
- 4 cups organic arugula
- 1 organic lemon squeezed
- 1 tsp salt
- 1/2 tsp pepper
- 3 Tbsp olive oil
- 1 organic orange squeezed
- 1/2 cup gorgonzola cheese(optional)
Place watermelon, avocado, and tomatoes in a large bowl set aside. In a separate small bowl add freshly juiced lemon and orange, salt, pepper, and olive oil, whisk together. On each plate add 2 cups arugula, divide the watermelon mixture, drizzle dressing on top. Add gorgonzola if desired.
