Grain free shrimp tacos. Even as I write this in the early morning hours these tacos get my taste buds excited! These tacos have a little kick(or baby kick) for us weaker on the spice index. One of the foods I have missed while on an autoimmune protocol lifestyle is a tortilla. Yes, I do make tacos from bib lettuce, or lettuce wraps, but I have to admit that there is a slight or significant difference if we want to admit it with a taco that is engulfed by a warm crispy tortilla. When I stumbled upon these Siete Cassava & Coconut Flour Tortillas, I couldn’t wait to try them. All I can say is….Delicious!
Grain Free Shrimp Tacos Serves 4

- 20 Shrimp skins removed and deveined
- 2 organic Limes about 1/4 cup
- 8 Siete Cassava & Coconut Flour Tortillas
- 1 large Avocado diced
- 2 tsp salt
- 1 pepper
- 1/4 cup olive or coconut oil
- 1/4 cup honey
- 1/4 cup cilantro chopped
- 1 Tbsp paprika
- chili powder to taste
Devine shrimp and set aside. In a small bowl mix oil, salt, pepper, honey-paprika, and chili powder and juice of one lime stirring to combine all ingredients. Add shrimp to the spice mix, Using your fingers coat each shrimp. In A large saute pan over medium heat cook or grill shrimp until it turns pink and cooked thoroughly. Heat tortillas in oven or a pan.
Divide and place shrimp mixture on warmed tortilla, squeezing the juice of lime on each taco topping with chopped avocado and chopped cilantro.
