Taco Tuesday will never be the same. This flavor packed recipe can be used as a base for fajitas, tacos, burrito bowls, or taco salads. You can keep it vegetarian or add your favorite meat.

Mix it up by adding lots of color from each season.

Instructions
  1. In a large saute' pan over medium heat add olive oil and garlic. stir and let garlic cook 2-4 mins, just until it starts to brown.
  2. Add Onion and continue to stir 2-3 mins.
  3. Add peppers stirring to mix continuing to cook for an additional 5 mins add mushrooms and taco seasoning (see note below for taco seasoning) continuing to cook and simmer until all veggies are still firm. Remove from heat. Note: do not overcook.
  4. Use grain-free tortillas, add fajita mix, top with guacamole, salsa, & chopped cabbage. Enjoy!

Paleo Taco Seasoning recipe

These fajitas go great with my grain-free paleo tortillas.  

You can also make these fajitas and top on a salad, make a burrito bowl, or nachos.

For meat, lovers variation Add some ground beef, ground turkey or steak.
