Broccoli Rabe & Turkey Meatballs

Ingredients:

3 Tbps Olive Oil
1 pound ground organic turkey
6 cloves garlic Minced
2- 14.5 canned tomatoes(skinned & seedless) or make your own. Take 8-10 Roma tomatoes place in boiling water.  Boil until the skin starts to peel off.  Remove from heat allow to cool slightly.  It is easier to remove the skin while hot. Remove insides of tomatoes and seeds. Chop
1/2 cup dry red
1 tsp salt & pepper
1 tsp sage
1 tsp thyme
1 tsp fennel(optional)
1/4 tsp red pepper flakes(optional)
2 bunches of Broccoli Rabe
Parmesan cheese optional

Directions:

In a medium, bowl add the ground turkey,  1/2 tsp salt, pepper, and 1/2 the amount of garlic along with all the spices.  Mix well with your hands.  Roll into 2-3′ balls.

Over medium heat in a large saute pan heat 2 Tbsps oil.  Place meatballs in pan cooking until meat is no longer pink.  Approximately 15 mins. Once cooked add the broccoli rabe Place a lid on the pan cooking just until fork tender.  Don’t overcook.

Meanwhile, In another medium saute pan add one tbsp oil warm then add in the remaining garlic and tomatoes.  Saute 10 mins or until tomatoes are soft and cooked.  Add in wine and 1/2 tsp salt & pepper continue stirring to meld the flavors together.  The sauce should start to thicken.

Place the meatballs on a plate top with the sauce and if parmesan(optional).

variation instead of broccoli you can use zucchini noodles, or a brown rice pasta.
