Chicken Salad with Spicy Lime Dressing
Ingredients serves 4
- 2 cups cooked shredded chicken
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup chopped walnuts or peanuts(if nuts are on your diet)
Dressing
- 3/4 cup Olive oil
- 3 Tbsp raw honey
- Juice of two limes
- 1/2 tsp salt & pepper
- 1/2 tsp or more to taste chili powder
Whisk ingredients all together and set in refrigerator until ready to use. Drizzle over salad and toss to mix. The longer you let the dressing sit in the salad the more flavorful.
Variation:
Add some pineapple or red cabbage into the salad. Raisins or cranberries make another great change giving the salad a sweet and spicy flare.
