Gluten + Grain Free Pancakes
Ingredients
2 cups Natural Cassava Flour Made from Yuca Root
2 eggs
1 3/4 cups coconut/ almond or regular milk
2 Tbsp Honey, Molasses or brown sugar
4 Tbsp coconut oil
6 tsp baking powder
1/2 tsp salt
Directions
Beat eggs until fluffy. Add coconut oil, milk, & honey, mix until smooth. In a separate bowl combine dry ingredients, stir with a fork until incorporated. Slowly add the wet to the dry continuing to stir to combine and minimize lumps.
Heat a griddle or skillet over medium heat. Grease with butter.
Pour 1/4 cup batter onto griddle cooking until fluffy and golden brown.
Note: If you chose to use gluten free flour instead of cassava flour decrease the flour by 1/4 cup. If you haven’t tried yucca flour give it a try. It’s a great alternative to gluten-free flour mixture. It’s an easy 1:1 transition ratio. Has all the taste of wheat flour.
These pancakes are light, fluffy and filling!
We love to add fresh blueberries or bananas. No need to add syrup these have just the right amount of sweetness.
