Couscous Grain Free

What is couscous? Couscous is small steamed grain balls of semolina, a crushed durum wheat. For those of us, that are on an autoimmune protocol lifestyle or following a paleo diet, it can be difficult to incorporate variations to wheat or grain products.  Cauliflower is one food that can mimic wheat  when riced in a food processor.   This Grain free couscous salad can be made year round changing the berries for carrots, apples, peppers, cranberries, so many other choices.

Grain free Couscous Salad 

  • 1 cup spinach chopped small pieces 
  • 1 cup strawberries chopped bite sized pieces 
  • 3/4 cup blackberries or boysenberries chopped bite sized pieces 
  • 1 Tbsp raw honey
  • 1Tbsp lime juice
  • 1 large avocado
  • 1/4 cup olive oil
  • 1 small head cauliflower
  • Salt and pepper to taste 

 

In a food processor pulse cauliflower until it looks like rice, set aside.  In another bowl whisk honey, lime juice, and olive oil together and salt/pepper to taste.  Chop spinach and berries and avocado add riced cauliflower mixture and drizzle with dressing. Toss to coat all ingredients mixing well. Serve
