Herb and Apple Brine Turkey

 

Ingredients

12-14 pound turkey (preferably organic)

8 Tbsp Ghee, Grass-Fed Butter or Olive Oil

sea salt to taste

1/2 tsp fresh ground pepper

2 Fresh Sprigs Thyme (leaves removed)

2 Fresh Sprigs Sage (leaves removed)

2 Fresh Sprigs Rosemary (leaves removed)

1 large Onion chopped

6 Cloves garlic minced

 

Directions:

Remove Turkey from Easy Apple Brine Transform your Turkey   Place turkey breast side up in roasting pan.

Position a rack in the lower third of oven preheating to 400 degrees.

In a small saucepan melt ghee adding fresh herbs, and garlic rub on turkey under the skin and outer skin.   Sprinkle with salt and pepper. Place chopped onion around turkey and a few pieces inside the cavity of the turkey.  Bake uncovered for 30 mins.  Lower temperature to 350 degrees basting every 30 minutes.  Continue basting every 30 minutes until thermometer reads 165 -175 degrees.   If the turkey starts to brown too much, cover loosely with foil.  When done place on counter to let rest for 20-30 minutes. Carve and Serve
