Lettuce Wrapped Fish Tacos with Mango Salsa

Tacos Serves 4

  • 4 filet of sole steaks
  • 1 Tbsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic salt or garlic powder 
  • 2 Tbsp Olive or Coconut oil
  • 4 large leafs of Bib lettuce
  • 1 organic lime or more

Preheat oven to 350 degrees.  In a small bowl combine seasoning, set aside.  On a glass baking dish arrange filet of sole steaks(skin side down). Drizzle with oil cover filet. Sprinkle each steak with seasoning mixture until coated. Bake for 20 minutes or until desired doneness.

 

Mango Salsa

  • 1 large organic mango cubed
  • 1 large organic avocado cubed
  • 1/2 cup organic red onion diced 
  • 1/2 organic lemon or lime juiced
  • 2 cloves organic garlic minced
  • salt and pepper to taste
  • 1 Tbsp cilantro chopped
  • 1 Tbsp Olive oil

In a small bowl place all ingredients and mix.  Top with olive oil and stir.

When steak is done break into bite-sized pieces, squeeze the lime juice and mix. Divide mixture into bib lettuce cups top with mango salsa.

Note:  You can use any type of lettuce, I prefer bib as it’s already a perfect cup and each to roll like a taco.
