I Made this paleo taco salad over the holidays and everyone raved about the variety and the flavor. Talk about eating the rainbow!
One of the things I love about this salad is you can make so much of it ahead of time a huge timesaver! I made the ground turkey, the sauteed veggies & dressing all the day prior to our holiday party. You can also change this base recipe up to for variety as well as any lifestyle modifications.
Ingredients Serves 6
4 Tbsp olive oil divided
1 pound organic ground turkey, chicken or shredded beef
2 cups small sweet tomatoes (organic)
2 cups peppers of choice(sliced in long slices)
1 large sweet onion diced
1 small bag of frozen corn (organic non-gmo)
1 large avocado cut into slices
2 hearts of romaine chopped
1/2 cup green cabbage chopped
1/2 cup red cabbage chopped
1/2 cup shredded carrots
Seasoning packet
2 tsp ground cumin
2 tsp salt
1 tsp garlic salt or powder
2 tsp paprika
4 tsp chili powder
1/2 tsp cayenne pepper
In a small bowl mix all the ingredients together and store in a jar.
Salad Dressing
2/3 cup olive oil
1/3 cup lemon juice or lime
3 tsp raw honey
1/3 tsp sea salt
Mix all the ingredients in a small jar and shake to mix. Store in the refrigerator.
Directions
In a large sautés pan over medium heat add 2 Tbsp olive oil let warm slightly then add in the onion. Let cook 5 mins then add in the sliced peppers and corn, sprinkle 1/2 of the seasoning mixture and mix well. Saute until desired tenderness around 15 mins. Set aside. Meanwhile, start chopping the tomatoes and slicing the avocados and make the dressing.
Using the same pan add in the remaining 2 Tbsp olive oil and the ground turkey or meat of choice. Sprinkle with desired seasoning (or 1/2 the remaining seasoning) stir to incorporate in the meat mixture. Cook until thoroughly cooked, set aside.
How to assemble your taco salad
On a large platter add your chopped romaine, red & green cabbage and shredded carrots. Next on the sides of the platter add chopped tomatoes, veggie mixture, and avocado. Drizzle salad dressing over the top.
You can add my favorite grain-free chips on the side on crunch on top!
