Do you remember when you would go to a friend’s house or come home from school to something warm and fresh-baked? I can almost taste my favorite snickerdoodle cookie. Soft and sweet! Yes, it is possible to eat all the deliciousness of desserts without feeling guilty! Eating healthy doesn’t have to be boring and there is no need to give up enjoying good food.

- 3 Granny Smith Apples peeled and chopped into bite sized pieces
- 3 Gala Apples peeled and chopped into bite sized pieces
- 2 Tbsp lemon juice
- 1/2 cup water
- 3 Tbsp coconut sugar
- 3 tsp cinnamon
- 2 tsp arrowroot starch
- 1/4 tsp sea salt
- 1 cup almond flour
- 1/4 cup gluten free oats
- 2 tsp cinnamon
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 3 Tbsp palm shortening
- 1/4 cup maple syrup
- 1 1/2 tsp Vanilla
- 3/4 cup almond butter or peanut butter

- Heat oven to 350 degrees and line an 11 'x 7''glass pan lined with parchment paper.
- In a medium mixing bowl add in all dry ingredients for the crust. Set aside.
- Using a standing mixer, blend on Medium, almond butter, vanilla, syrup, palm shortening. Blend until smooth. Add the dry ingredients and blend again until the dough is crumbly.
- Using 1/2 the mixture spread the dough evenly into the prepared glass dish. Press until nice and firm. Bake 10 minutes.
- In a medium saucepan over medium heat combine apples, lemon juice, water. Bring to a boil. Cook until apples are firm but soft.
- In a small bowl add in the sugar, arrowroot starch, cinnamon, sea salt. Add in the apples and toss to thicken.
- Top with the remaining crumb crust.
- Add the apple mixture over the crust and bake for 25 minutes. Remove and let cool.
- Keep refrigerated and allow to firm.
