Beet(love 0r hate) full of goodness!
I love Beets! I know most people either love or hate them, our family is no exception. I can’t get enough beets and my husband is lukewarm. He will tolerate them from time to time so I slip them in whenever I can. My daughter, on the other hand, is learning to like them with a fun game I came up with to inspire her to try eating them. A game we call whose tongue is redder.
Beets are one of those vegetables that are loaded with a wide array of health benefits. Beets are an anti-inflammatory, antioxidant with cancer-fighting abilities. It detoxifies is a great source of folate, potassium, manganese, and fiber.
You can roast them, steam them, even make crispy beet chips. One of my favorites ways to prepare beets is to top on a salad.
Beets come in a variety of colors and shapes and have a sweetness to them. Try using a combination of beets for a beautiful colorful salad.
Roasted Beet Salad
Serves 4

- 6-8 cups mixed greens( I love to use some baby arugula alone or add some to a spring mix)
- 4 cups roasted beets diced into cubes(see below)
- 1/4 cup goat cheese in crumbled or
- (dairy free option use kite-hill ricotta -Add 1/4 cup cheese in bowl with salt/pepper to taste, 1 clove garlic minced)
- 1 cup meat of choice(wild salmon is a great accompaniment)Wild Planet Wild Alaskan Pink Salmon, Boneless & Skinless, 6-Ounce Cans (Pack of 6)
- 1/4 cup sliced almonds

Dressing
- 2 Tbsp olive oil
- 1/4 cup lemon juice
- 1 Tbsp Dijon mustard
- 2 tsp honey
- 1 tsp shallots minced
Add all ingredients in a glass jar, shake drizzle over salad.
Roasted Beets
Preheat oven to 375 degrees. Cut tops and bottoms off beets. Place beets top side down in a glass dish arrange so beets aren’t touching. Drizzle olive oil, salt, pepper and fresh rosemary sprigs or any desired herbs. Place in oven cook for 40-50 mins. Let cool- when cool to touch remove skin with a paring knife, slice and cube.
In large platter layer greens, beets, cheese, almonds, and meat. Drizzle with dressing!
