Ingredients 4 Servings

4-4-6ounce salmon filets

2 lemons juiced

3 tbsps olive oil

3 tbsps maple syrup or honey

1/2 tsp pepper

1/2 tsp salt

1/4 tsp red chili flakes

1/2 tsp sesame seeds

2 tbsp cilantro chopped

6 cups chopped vegetables (asparagus, red peppers, onions, tomatoes, mushrooms) mix it up and make it colorful!

8 skewers

 

 

Directions

 

Preheat indoor or outdoor grill.  Slice Salmon into 1-2 in slices,  place in a large bowl. Add in the remaining ingredients. Toss coating salmon and vegetables.  Line up skewers, place cubed salmon alternating vegetable, salmon until skewers are full. Place kabobs on the grill, turning after 5 mins.  Salmon should be pink and moist and flaky.

 

Serve with a side of cauliflower rice or sweet potato fries!

Bring the kids into the kitchen a great time to teach them to cook.  They will love to assemble the kabobs.
