Turkey Meatball Soup

  • 10z White Beans soaked overnight
  • 2 Tbsp olive or coconut oil
  • 1 onion chopped 
  • 2 carrots  thinly chopped
  • 3  celery sticks  thinly chopped
  • 5 garlic minced
  • 1 tsp oregano
  • 6 cups chicken stock
  • 1 cup water
  • 1 jar 15 oz tomato puree
  • 2 large zucchini thinly chopped
  • 1 tsp salt
  • 1/2 tsp pepper 
  • 1/2 cup chopped fresh basil

Turkey Meatballs

  • 1 Pd ground turkey
  • 1/2   onion chopped
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

 

The night before in a large bowl add dry white beans adding water to completely cover. Soak overnight.   In a large dutch oven warm oil, add chopped onion saute until translucent.  Add garlic, carrots, zucchini and celery stirring 5-10 minutes.  Slowly add tomato puree, water, and seasoning.  Cover and simmer. Meanwhile in a large bowl add ground turkey, onion, and seasoning.  Roll into 1 inch balls.  In a large pan saute turkey meatballs until cooked thoroughly. Add meatballs to soup mixture stirring and replace cover.  Simmer until beans are cooked thoroughly 1-2 hours.  This is great in a crock pot.

Note: This recipe can be made suitable for autoimmune and paleo protocol.  Just omit the beans. Still the same great flavor!
