Turkey Meatball Soup
- 10z White Beans soaked overnight
- 2 Tbsp olive or coconut oil
- 1 onion chopped
- 2 carrots thinly chopped
- 3 celery sticks thinly chopped
- 5 garlic minced
- 1 tsp oregano
- 6 cups chicken stock
- 1 cup water
- 1 jar 15 oz tomato puree
- 2 large zucchini thinly chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup chopped fresh basil
Turkey Meatballs
- 1 Pd ground turkey
- 1/2 onion chopped
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
The night before in a large bowl add dry white beans adding water to completely cover. Soak overnight. In a large dutch oven warm oil, add chopped onion saute until translucent. Add garlic, carrots, zucchini and celery stirring 5-10 minutes. Slowly add tomato puree, water, and seasoning. Cover and simmer. Meanwhile in a large bowl add ground turkey, onion, and seasoning. Roll into 1 inch balls. In a large pan saute turkey meatballs until cooked thoroughly. Add meatballs to soup mixture stirring and replace cover. Simmer until beans are cooked thoroughly 1-2 hours. This is great in a crock pot.

Note: This recipe can be made suitable for autoimmune and paleo protocol. Just omit the beans. Still the same great flavor!
