I am in LOVE with Zucchini right now. I am always on a mission to come up with a new way to use zucchini. Zucchini is a great alternative to pasta, you can spirilize it or slice it into long strips for lasagnes noodles or make these little stuffed boats.
This recipe can be made AIP by omitting the cheese. You can also try cheese alternatives. Some of my favorites include Kitehill, or Miyokos. They taste delicious!
Zucchini Boats Recipe serves 4
- 6 large organic zucchini cut long ways with the seeds hollowed out like a boat
- 1 large organic chicken breast diced into small pieces
- 2 cloves organic garlic minced
- 1/2 organic onion diced
- 1/2 cup parmesan cheese
- 1/4 cup mozzarella cheese
- 1/2 cup small organic cherry tomatoes
- 1 8 oz jar organic tomato sauce(for ease you can purchase a jar of your favorite pasta sauce)
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp coconut oil or olive oil
- 1 tsp Italian seasoning or all purpose seasoning
- 1 tsp thyme
Preheat oven to 350 degrees. In a large pan heat oil add garlic and saute until lightly brown. Add the onion and seasonings. Stir until onions are translucent. Next, add the tomatoes or jar sauce and the remaining ingredients. Saute for 10 minutes, add the chicken and stir. Arrange the zucchini on a glass baking dish. Add the chicken sauce mixture to the boats. Top with cheese and bake for 30 minutes.
I keep increasing this recipe as My husband loves it. We never seem to have lunch leftovers.
